From Apple :

This software update provides better support for Asian languages, enhanced On-The-Go playlist functionality, improved playback performance and handling of MP3 VBR songs, and more reliable sorting features. It also fixes left/right channel swapping and backlight performance.

Note: iPod Software 2.0.1 supports only iPods with a dock connector. Touch-wheel and scroll-wheel iPod owners without a dock connector should download iPod Software Update 1.3.1. The Download Now link will direct you to a form on Apple's Web site that you must fill out prior to downloading this file.
