Summary
I was looking to extract all my personal information from my iPhone (primarily contacts and text messages) and I looked high and low for something that would make it easy. iBackupbot was perfect. It's a very basic interface but allows you to access everything on your iPhone (including images) so that you can extract it and save it wherever you like (not just in iTunes). Best of all, I discovered that it was able to extract every text message I had ever sent - not just the most recent ones that display. And as I mentioned above, you can extract them as a text file, an Excel spreadsheet or as a database file.
If you have an iPhone and are annoyed with how stuff like text messages is locked up, I definitely recommend iBackupbot.
