Sourdough calculator is very useful app for anyone who bakes sourdough bread or other bakery goods based on sourdough. It is implementing the following: - Bakers Percentages calculator - Sourdough maintenance calculator - Instruction to create first sourdough starter - Organic Whole Wheat recipe Calculators ---------------- 1) Bakers Percentages - in which flour is the primary ingredient in calculating bakers percentage and is always set as 100% of the recipes ratio. This calculator gives option to scale up or down the dough you want to prepare 2) Sourdough Calculator- Built to assist sourdough elaboration /feed (starter) which can be used in the following situations: - first creation for the sourdough which usally takes 6 days in this stage you can select hydration to 50%. - Maintain (75% hydration) sourdough (every 2 weeks if no bread was baked from it) - Rise up the sourdough activity before making the bread Hydration can be set in this calculator according to the desired level 50% for start/create sourdough 75% for maintenance after first bread when you want to refresh the sourdough The principle is to triple the sourdough weight and keep same hydration percentages of the sourdough It include also instructions how to make the first sourdough (starter) , and recipe for basic sourdough Important: this app is not build to provide bread recipes but more as calculator to help create and maintain the sourdough + scale up/down dough for sourdough bread for bakers among us.
