Nestled in the Teatro Mall on Tahlia Street, Brasserie Louis' general manager, Ubeda Jean Louis, lured Michelin-star French chef Claude Durand and his wife, Agnes, a creative pastry chef. Ubeda Jean Louis put Durand in charge of a kitchen staff of about a dozen people.
Paris-trained under the best French chefs, Durand has spent 30 years traversing the globe providing restaurant patrons in France, England, China, Macau among other countries with the best in French cuisine. Even Famous president dined on Durand's specialties, including Foie Gras, Bouillabaisse, Pommes granites and escargot. At Brasserie Louis, Agnes, who has worked 10 years as a pastry chef, complements Durand's dishes at the end of the meal with such delights as apple crumbles, Souffle Au Chocolat, tarte tatin and fondant desserts.
