From HandBrake :

HandBrake is a GPL'd multi-platform, heavily multithreaded DVD to AVI/MPEG-4 converter. HandBrake is currently available for BeOS and MacOS X (with GUI) as well as for GNU/Linux (CLI only).

Features:

Can encode directly from DVDs (even encrypted ones)
Supports 2-pass encoding
Supports encoding of two audio tracks
Includes a bitrate calculator
Supports picture cropping and resizing

Known issues:

Only handles AC3 audio tracks
Only handles DVDs or DVD folders (e.g. it cannot encode a single VOB file)
